The best part for her is seeing people’s faces light up from a simple delectable treat that she made herself! Below are her recipes that she knows can bring a little light in your life!

Ingredients

  • 1 large egg
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • ¾ cup light brown sugar (packed)
  • 2 cups semisweet chocolate chips 
  • ⅔ cups granulated sugar 
  • ½ tsp salt
  • 2 tsp vanilla extract
  • 1 tsp apple cider vinegar 
  • 1 cup butter 

Instructions

  1. Preheat oven to 350 degrees 
  2. Line baking sheet with parchment paper 
  3. Mix flour, baking soda, and salt together in a medium bowl (set aside)
  4. Slightly melt butter in microwave (should still have small solid pieces)
  5. Beat butter, sugars, vanilla, and vinegar until smooth 
  6. Beat egg into butter mixture just until combined 
  7. Mix flour mixture into butter mixture just until combined 
  8. Stir in chocolate chips 
  9. Using a large cookie scoop, separate cookies by 3 inches on baking sheet 
  10. Bake for 8-10 minutes (edges should look  light brown and center slightly underdone) 
  11. Cool for 10 minutes 
  12. Enjoy!

Strawberry Cheesecake!

Cheesecake Ingredients:

  • 2 (8oz.) packages philadelphia cream cheese (softened)
  • 1 (14oz.) can eagle brand sweetened condensed milk 
  • 3 large eggs (room temperature)
  • ¼ cup lemon juice 
  • 2 tbsp lemon extract
  • 2 tbsp vanilla extract
  • 2 10 inch keebler graham cracker crust 

Topping Ingredients:

  • 1 (8oz.) dean sour cream
  • 1 (8oz.) philadelphia cream cheese (softened)
  • 1 tsp vanilla extract

Glaze Ingredients:

  • 1 package of strawberries 
  • 1 tsp granulated sugar 
  • 1 (21oz.) can strawberry pie topping

Strawberry Cheesecake Instructions

Cheesecake:

  1. Preheat oven to 300 degrees 
  2. Beat softened cream cheese until fluffy 
  3. Gradually beat condensed milk into cream cheese until smooth 
  4. Add eggs and lemon juice (mix well)
  5. Fold in vanilla and lemon extracts
  6. Pour batter into both graham cracker crusts 
  7. Bake for 50 minutes 
  8. Remove from oven 

Topping:

  1. Mix sour cream, cream cheese, and vanilla until smooth 
  2. Add even amounts to both cheesecakes 
  3. Put cheesecakes in oven for 5 more minutes 
  4. Cool cheesecakes for 1 hour 
  5. Chill cheesecakes for at least 4 hours 

Glaze:

  1. Thinly slice strawberries 
  2. Add to bowl and sprinkle sugar on strawberries 
  3. Add glaze to strawberries and mix together 
  4. Add glaze to cooled cheesecakes 
  5. Enjoy!
